Wonton Cup with Mixed Quinoa Salad & Orange Zest

Ingredients
  • 1 pack round wonton sheets
  • 1 cup quinoa (half red, half white)
  • 2 cups water
  • 2 ripe avocados | diced
  • 1/4 cup fire roasted bell peppers | diced
  • 1/4 cup navy white beans | cooked
  • 2 tsps salt
  • 2 navel oranges | zested
Directions

Set the oven to 350 degrees. Coat a mini muffin tin with olive oil. Gently press wonton sheets into each mold and push to all sides, making a cup. Brush the inside of the cup lightly with oil and bake for 10 minutes or until golden brown. Set aside.

 

In a medium pot, combine quinoa, salt, and water. Bring to a boil, then reduce to a simmer on medium-low heat. Cover and continue simmering for 15 minutes until all water has been absorbed. Fluff with a fork and set aside to cool. 

 

In a large bowl, mix quinoa, diced roasted red bell peppers, navy white beans, and avocado. 

 

To assemble

Fill each wonton cup with quinoa salad and garnish with orange zest.
