Paired with Chardonnay — because even Suzy Jr. knows a good scone deserves a good glass of wine.

The notion was born on a warm evening when the mistral whispered through the vines and nobody could agree on who invited whom to dinner. A bold orange clutched the golden chicken thighs. Midnight purple corn arrived dramatic, with fanfare. Cauliflower floated in as a cloud so silky it made no sound. Hazelnuts settled the room. Then — Boom! — The edible flowers appear. No one saw them arrive. No one dared ask. Simply delicate, otherworldly, and the living definition of that je ne sais quoi. A blend with the soul of the southern Rhône. Layered, sun-warmed, and just a little wild.

Syrah rides in from the rugged west, sun-kissed and smoky. It finds Baba Gaboush waiting — charred, silky, whispering of open flames and Mediterranean evenings that had no intention of ending. Beside her, a cowboy caviar with a well-worn passport: kidney beans slow and steady, red bell pepper bright as a desert sunrise, vibrant flat leaf parsley and savory chorizo, bold and unapologetic. Bread takes a seat, humble and honest, the way good bread always does. Two worlds. One table. Syrah pours itself a seat and stays.

Cabernet Sauvignon didn’t expect this. But then again, neither did anyone else. A yellow corn tortilla arrives crisp and confident, carrying refried black beans dark as volcanic sediment. Tenderloin carne asada, seared and unapologetic, ready for el baile with salsa verde, tangy and confident. Onion and cilantro conduct the chorus of a canción ranchera nobody could get out of their head. Queso fresco softened the edges, but lime ties it all together. Cabernet raises an eyebrow, then its glass. Daring, unexpected and completely inseparable.

Malbec lucked out. And it knows it. Spam Maki arrived with the quiet dignity of a craft centuries in the making. Nori, precise and purposeful. Rice, each grain an act of intention. Tamago egg, folded with patience and care. Avocado, placed just so. Furikake, a final blessing of the sea. And Spam — elevated, treated with the same reverence the Japanese bestow on every ingredient that earns its place at the table. Malbec stood a little straighter, grateful to have been invited.
