Chile & Coffee Cheese-Topped Roast Beef with French Fried Onions
with NV ‘2015’ Pentimento
Ingredients for Cheese Filling:
2 cups cream cheese
2 Tablespoons coffee
1 teaspoon orange zest
1 1/2 Tablespoons Chili Powder
1/2 teaspoon salt
4-6 garlic cloves, roasted
2 Tablespoons Thai Basil
Roast Beef as Needed
French Fried Onions as Needed (We Use French's)
Sliced Bread (If Making Sandwiches)
Directions for Filling:
Put all ingredients into a food processor, and blend until smooth.
This makes enough to fill one mason jar, which goes a long way. Depending on how much you need, you can freeze the remainder and thaw it at a later date.
Cut roast beef into cubes.
Fill a pastry bag with cheese filling. Using the bag, top each cube with a dallop of filling.
Top with French Fried Onions, and serve.
Slice roast beef, as needed for sandwiches and place on bread.
Top with desired amount of cheese filling and French-fried onions. Close each sandwich, and enjoy!
