' Le Cuvier - Fennel Sausage

Fennel Sausage

Fennel Sausage with Cranberry Sauce
with NV Pentimento 
I lb of cranberries
½ Cup of orange juice
Zest and juice of one orange
1 inch piece of peeled and grated ginger
½ cup of water
2 TBS sugar
Fennel sausage
Combine all of the ingredients above, except sausage, in a heavy bottom pot and bring to a boil
When cranberries start to pop, remove from heat and let cool.
Sauce will thicken as it cools
Slice fennel sausage to desired size and top with cranberry sauce
