Thai Style Noodles with Citrus Broth

Thai Style Noodles with Citrus Broth
Paired with 2014 Chardonnay


Ingredients:
2 Cara Car Oranges
1 Lemon
1 Lime
1 Bunch Cilantro
1 Bunch Basil
1 Stalk Lemongrass1
3 inch long piece of Ginger
1 Package Thai Rice Noodles
2 ounces Thai Sweet Chili Sauce
9 Cups Boiling water

 

Directions:
1. Bring 9 cups of water to a boil. Remove from heat and add 7cups of boiling water to rice noodles. Let stand for 3 minutes. Drain noodles well and add 2 ounces of sweet chili sauce, mix well and chill.
2. Slice oranges, lemon, lime, lemongrass, and ginger. Roughly chop cilantro and basil. Place all ingredients into a french press and add remaining 2 cups of boiling water. Let tea for 5 minutes before gently pressing down to extract all flavors. Strain tea to remove any pieces of fruit or herbs that may have made there way through and chill.

 

To Serve:
Add desired amount of chilled marinated noodles to a Chinese soup or other deep flat bottomed spoon and 1/2 ounce of chilled citrus tea.
